Yes, stories that cover Buffy's 'absences' are generally interesting - not just those set during her death but also those that cover her visits to LA... A lot of things can happen during the summer months...
I always meant to write a post-Gift story about Giles and Spike, but I never got round to it... Spike/Giles is still on my list of things to do.
